Bikini

Yields 10 servings

To make the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

Making the Citrus Syrup: Combine all the ingredients into a pan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, remove from the burner and leave to reach room temperature fully. Transfer into an sterilised bottle, seal and refrigerate it in the fridge, it can be stored for up to four weeks.

To make Premix: Pour the specified liquids into a big jug, allow it to infuse for an hour, then strain best through cheesecloth, to ensure it's perfectly clear.

For serving: Pour 85ml of the batch mix into a mixing glass filled with ice, and stir lightly for about 60 seconds to cool it down. Pour into a frosted cocktail glass or a similar vessel, garnish with the cranberries and finish using a light spray with the mandarin essence over the top.
